MMMMM, Banana Muffins

I LOVE to bake. My mom let me help her in the kitchen for as long as I can remember- stirring, cracking eggs, licking the bowl... all the important stuff. Then as I got older, baking helped me learn my fractions too!
This banana muffin is super easy, and because it's quite healthy (oatmeal, banana and only a little bit of oil) I add lots of chocolate chips! (Makes a dozen medium muffins - how many is that?)

Banana Muffins

ingredients:
3 large mushy/brown bananas
3/4 cup of sugar
1 egg
1/4 oil
3/4 cup of flour and oatmeal each
1 tsp of baking soda and baking powder each
a few pinches of cinnamon and...
mini chocolate chips (you decide how many!)

directions:
preheat the oven to 375 degrees
mush the bananas in a big bowl (kids, adults will need help with this)
add the egg (no shell!), oil and sugar, then mix it all up
add the flour and oatmeal
then the baking powder/soda (use a sieve in case they're lumpy)
then add cinnamon and chocolate chips and mix it all up!
finally, add some more chocolate chips for good measure.

Spoon the mixture into a lightly oiled muffin tin or these cute little cups and bake for about 16 min.
Let them cool off, then devour with a big glass of cold milk!


PS. I got these adorable little cupcake holders for Christmas from my husband's mom... My husband usually complains that when I bake he only gets one or two cookies/muffins and I eat the rest. I guess the colour-coded cups fix that problem!
